Discover the story of Mamoru Kanaya, a two-time Ramen Champion winner, who has returned to the noodle scene with a new eatery at Sim Lim Square named Menya Saku by Oh Some Bowls. This no-frills ramen shop focuses on two main styles: Hakata-style tonkotsu ramen and chuka soba (Japanese-style Chinese noodles). Kanaya's journey began in Hokkaido, Japan, where he relocated to Singapore in 2011 to work as an izakaya chef. He later joined Ramen Champion, where he learned how to cook ramen for the first time. After leaving Buta God in 2014, Kanaya worked across different Japanese concepts before opening a Japanese-inspired salad shop, Oh Some Bowls, in 2018. Now, he has returned to his ramen roots with Menya Saku by Oh Some Bowls, where he does everything in the kitchen himself, from soup preparation to final plating. The shop has had its share of ups and downs, but Kanaya is still fine-tuning aspects of the menu and workflow as he settles into this new chapter. For now, he has no plans to grow beyond this single shop, but he hopes more people can give them a chance to try their ramen.
